Dinner meals

Postby Grzldvt » Thu Jun 12, 2014 3:28 am

Lots of talk about where to go, but zero on meals., so let's start a meal thread. I am about to do a three day/two night trip, and we are going to do dinners independently. I have one Cup-O-Noodles which is OK, but what else have you got for a single meal. Let's skip the standard off the shelf Mountain House type commercial meals, and go for original grocery store stuff.
So far my choices are:
Pizza - the Boboli 8" Pizza fits perfectly in the Garcia+ canister, add some pepperoni and Parmesan cheese cooked on parchment paper and it is a good one
Cup-O-Noodles/Top Ramen - OK
Knorr Soup Starters
Lipton Noodle Side Dishes
What else you got?

I dehydrate leftovers and things like canned chili, boil-in-bag Indian food from Trader Joes, and rice or pasta. Elaborate cooking stays home.

Flatbread and nut spreads, dehydrated refried beans and a cheese stick on a tortilla, tuna packet/mayo/relish on a tortilla...

Tons of ideas at trailcooking.com and more in her books, which are inexpensive.

One of our go to meals at home is "taco rice", and I've adapted it for trail use. The beauty of it is that you can add whatever suits your tastes. Start with minute rice, freeze dried hamburger, and taco seasoning.
I like to add dried corn, dried bell peppers, and dried black beans. You can play around with the proportions to your liking/hunger. Put it in a quart freezer zip lok, add boiling water and let sit in a cozy at least 10 minutes. Then I add some cheese, Taco Bell sauce packets, and Fritos. pretty tasty!

We always start with instant Miso soup--very easy, tasty, and a great hydration vehicle.

Ramen is OK...but we also dehydrate things. Slice a burrito like a loaf of bread, and dehydrate the slices. Makes for a perfect burrito casserole...

Small zucchini squash (6" max) or frozen peas, apples (small), cut/sliced casaba melon and lime (put those in a ziplock), instant rice, and for the main course...trout and pan fry, season to taste. You'd be surprised how far one squash, rice and fish will get you. Desert is fresh as well, just squeeze the lime over the melon....aaaaahhhhhhh. Have fun.
